A good knife, a chopping board, a frying pan, a saucepan, a colander and a few storage containers: with that you already cover the vast majority of everyday recipes. Invest in a quality knife, it changes everything.
What can wait
Specialised appliances that hog space and get used once a year can wait. Focus on the versatile stuff. You'll build up your kitchen over time, based on what you actually enjoy cooking.
Rummaging through flea markets or inheriting family gear is a great way to kit yourself out without splurging. A good tool, well cared for, lasts years.
