We all know that moment: the fridge is nearly empty, you can't be bothered to go out, and you still need to eat. Good news: with a few basics and a bit of cleverness, you almost always pull it off.

The chameleon dishes

An omelette, a fried rice or pasta pan, an improvised soup: these are dishes that accept almost any leftover. A bit of veg, an egg, a little cheese, and you get something decent and warm.

The smart pantry

Always keep a few essentials that keep well: pasta, rice, canned pulses, eggs, spices, oil. With that in reserve, even an empty fridge is never a real problem. You improvise a decent meal in ten minutes.
